Fresh Cherry Pie Fill

4 tbsp. corn starch
1 cup sugar
2 1/2 cups, pitted tart cherries
1 cup liquid, juice or water
1/8 tsp. almond extract

Blend corn starch and sugar thoroughly in a saucepan.  Stir in liquid and cherries.  Cook, stirring constantly, until mixture thickens and boils.  Boil 1 minute, mixture will turn clear.  Remove and cool.

Cherry Syrup

1 cup cherry juice
1 cup white sugar
1 cup white corn syrup

Combine cherry juice, sugar and corn syrup.  Simmer for 15 minutes.  Great over pancakes, waffles and French toast!

Cherry Bounce

2 qts. Fresh cherries
1 cup sugar
1 qt. Of favorite spirits, vodka, brandy, etc.

Put contents in air tight container.  Stir twice a day until sugar dissolves, then let sit for 6 weeks or longer.  Makes a wonderful Christmas drink!

NOTE:  We have heard as many Cherry Bounce recipes and techniques as there are people.  It is our conclusion that personal taste varies to such a degree it is best to do your own experimenting.  Liquors that are sweet, such as Southern Comfort, do not need sugar.  Because cherries soak up so much of the alcohol, if you choose not to eat the cherries, you may want to squeeze juice from the cherries back into the liquid.  You can also wait and add your sugar just prior to drinking. 
CAUTION: Cherry Bounce is a liqueur, not to be drunk in full tumblers.
